Caramelized Grilled Pineapple with Vanilla Ice Cream

My very favorite grilling recipes are always the unusual ones — not the meaty mains, or the standard grilled vegetables. It’s the recipes that make me rethink what it means to cook with fire. And this recipe for grilled pineapple with ice cream from Anna Jones’ The Modern Cook’s Year is exactly that. It reminds me that grilling doesn’t start and end with dinner, and that the simplest recipes are often the most delightful.

You only need three ingredients: pineapple, honey or brown sugar, and ice cream or yogurt. Anna also has a recipe for grilled peaches in her new book, which I imagine would also be gorgeous as a substitute for pineapple.

Here’s what you’ll do: Heat the grill to medium-high. Peel the pineapple (or pineapples, if you’re feeding a large crowd) and cut into wedges. Toss with just enough honey or brown sugar to evenly coat the wedges, then place on the hot grill grates. Grill until the fruit is charred on the outside and soft on the inside. Serve warm, topped with vanilla ice cream or yogurt.
