These Grilled Lemon Chicken Drumsticks Are a Pantry Miracle

Happy Friday, friends! How are you spending the long weekend? I’m hanging out in New York and have a slew of things I want to take advantage of — one, of course, is trying to grill or picnic or just do something that involves being outside and eating. I’ve already shared a delicious avocado grilled chicken this week on Delicious Links, and today I’ve got my eye on these Greek lemon drumsticks.

You only need seven ingredients for this easy grill recipe: chicken drumsticks, lemon (juice and zest), olive oil, garlic, salt, oregano, and red pepper flakes. You whisk together all the ingredients besides the chicken and then pour over the chicken. You let the chicken marinate for 30 minutes to four hours, and then grill until cooked through. The blogger behind Little Broken says to grill for 20 to 30 minutes, but that might be shorter depending on the heat of your grill.

I can see this chicken being a great addition to a larger spread of food. Maybe one of your friends could bring one of these awesome salads to the party, maybe another person could make this very trendy drink, and then someone has to bring dessert of course. I’m partial to something with berries for this weekend, like this delicious-looking slab pie or maybe this upside-down strawberry skillet cake.
