It might only be Wednesday, but I’m already dreaming and scheming about food and drink plans for the long weekend ahead. What kind of cocktails do I want to make? Is pasta salad in my near future? And what about grilled pizza? You get the idea.

So when I stumbled upon this easy chicken dinner gem while scrolling through Pinterest, I knew I had to add it to my Memorial Day weekend plans. It’s just the kind of un-fussy recipe I want to make while sipping on something cold.

This isn’t just any grilled chicken recipe. First of all, the chicken is marinated in honey-garlic-balsamic sauce for a hot minute. How delicious does that sound? After that you grill the chicken for six minutes on both sides until cooked through, and then you top it with mozzarella, avocado, basil, tomato, and a balsamic drizzle. That’s the whole recipe — nothing fancy or complicated about it at all.

If you’re like me and don’t have any outdoor space for a grill (sob), then there’s always the option of using a grill pan for this recipe. Many of the reviews note that this is lighter weight than other grill pans and it heats up in a short time.
