So when I stumbled upon this easy chicken dinner gem while scrolling through Pinterest, I knew I had to add it to my Memorial Day weekend plans. It's just the kind of un-fussy recipe I want to make while sipping on something cold.
This isn't just any grilled chicken recipe. First of all, the chicken is marinated in honey-garlic-balsamic sauce for a hot minute. How delicious does that sound? After that you grill the chicken for six minutes on both sides until cooked through, and then you top it with mozzarella, avocado, basil, tomato, and a balsamic drizzle. That's the whole recipe — nothing fancy or complicated about it at all.
