This Tasty Spin on the Classic BLT Calls for an Herby, Anchovy-Spiked Dressing

In my opinion, BLTs are as simple as they are satisfying. What’s not to love about crispy bacon, lettuce, and tomato on mayo-slathered toast? But the beauty of simple pleasures is that there are always small tweaks that will make them even better. 

Cookbook author Adrianna Guevara Adarme of A Cozy Kitchen has recently been posting a sandwich series on Instagram, in which she gets a bit in-depth on some beloved sandwich creations. In the latest installation, she takes the traditional BLT and gives it a serious upgrade by switching out the mayo for some glorious green goddess dressing.

“For some reason, when bacon is crispy and sandwiched between two soft pieces of bread with a swipe of mayo, crisp lettuce, and soft tomatoes, the clouds part and … heaven,” she shares in her accompanying blog post.

The traditional slather of mayo is switched out for a green goddess variety, which she advises making ahead and setting aside. The dressing is simple enough, calling for your favorite mayo mixed with chopped basil, chives, parsley, and tarragon. The addition of anchovy fillets, kosher salt, freshly cracked pepper, and lemon juice results in a dressing that is tangy, loaded with flavor, and ready to be slathered on your sandwich.

Green goddess dressing may be best known as a dressing for salads, but its possibilities have been proven to be endless, from being used as a pesto variant to an ingredient in hot skillet dishes.

After making the dressing, start prepping your bacon. In this recipe, the bacon is baked in the oven instead of fried (you can always use your air fryer, too!). Next, slice up tomatoes and sprinkle with salt while tossing your bread in the toaster.

Believe it or not, that’s all the prep involved! Now just lightly slather your toast with the dressing on both pieces of bread. Then, add the bacon, lettuce, tomato, and some freshly cracked black pepper. 

The leftover green goddess dressing will last in the fridge for a few weeks, and can have loads of possibilities, from salad dressing to a fun dip for fresh crudité. Whatever you choose to make with it, I’m sure it’ll be delicious.
