If you’re a DIY fanatic who likes to experiment in the kitchen, I’ve got a fun project for you. Grab some popcorn kernels and a blender — we’re making polenta.

Yes, it’s true! If you pop the kernels in a large stockpot on the stove, blend the popcorn with very hot water and heavy cream, and then pour the mixture through a fine-mesh strainer, you can make your own version of polenta at home.

Once you’ve got your strained polenta, you stir in some shredded cheddar, butter, and salt and pepper. While it would be totally delicious eaten as is, the author of this recipe also provides a recipe for mushroom jus to pour over top. It means a little extra time in the kitchen, but hey — that’s what weekends are for, right?
