Once summer rolls around, we all want to spend as much time outside as possible. After a day stuck in the office, the last thing you want to do is spend an hour or more in your kitchen cooking dinner. That’s where this quinoa salad comes in — it’s filling, flavorful, and comes together in 20 minutes.

The key to getting this salad on the table in 20 minutes is using a store-bought rotisserie chicken. All you have to do is shred it — no cooking required! Or, if you have some leftover grilled chicken in the fridge already, feel free to add that in instead.

This salad is also the perfect way to showcase the beautiful tomatoes and basil that are in season during the summer. You simply toss diced tomatoes (heirlooms would be lovely here), minced garlic, and thinly sliced basil together with olive oil, balsamic, salt, and pepper to make a bruschetta mix that pairs perfectly with the quinoa and chicken.

This salad is great for busy weeknights, but it would also be a perfect dish to bring to all the cookouts and potlucks you have coming up!
