We’re starting with our basic muffin recipe and giving it a boost with the help of a spoonful of jam. So when you want to give your muffins a fruity boost, you can use this trick even when the pickings are slim for fresh fruit or you’re out of the frozen stuff. You probably always have a jar of jam in the fridge. (Or, if you’re like me, you have four.) Blackberry, strawberry, raspberry, apricot — all are fair game.

How to Do It

Prepare the batter for basic muffins. Spoon the batter into muffin tins, and swirl about 1 teaspoon of your favorite jam through each muffin. Bake according to the recipe instructions.
