These Giant Peanut Butter Cups Use Rice Cakes as the Base and I Don’t Know Why I Didn’t Think of That Myself
As the resident dessert connoisseur on the site (yes, I’m taking that title — sorry, y’all!), I’m always looking for new and exciting recipes to share. My latest find may be my favorite so far, as it admittedly makes my mouth water every time I see it on my timeline. And while I’m no stranger to picking up store-bought vegan desserts when I’m perusing the aisles, there are times that I undoubtedly want to try my hand at something homemade instead.
Thankfully, Liz from Vegan Diaries (@vegandiaries___) has a recipe for giant peanut butter cups that is vegan-friendly and easy enough for even a novice like me to make. With just four simple ingredients, you can satisfy your sweet tooth with a quick treat that will be a go-to favorite this summer and beyond.
To begin, spread your favorite natural peanut butter over a plain rice cake. Then, dip each peanut butter-covered rice cake into melted Lindt dark chocolate. To keep it vegan, remember that only the Lindt dark chocolate (70 percent and over) is vegan, so avoid using the smooth varieties. If you can’t access Lindt, Aldi’s Moser Roth 70 percent dark chocolate is a great vegan-friendly substitute. Next, sprinkle some sea salt flakes on each rice cake. Finally, you’ll place them in the freezer until they are nice and firm. After that, there’s nothing left to do but enjoy them.
