Comfort food for me usually involves a bowl of saucy roasted vegetables and grains. Something a little spicy is always a bonus. That's why this gorgeous dish of curried roasted eggplant with a dollop of sour yogurt and fluffy rice is my new BFF for the late summer and fall.
There's a lot going on in this dish, with so many spices and components that aren't initially obvious. While it might take some time to make, if you make a huge batch you can freeze some for later.
