Make These Garlic Mushroom Chicken Thighs ASAP

One of the hardest parts of adulthood is asking the question “What’s for dinner?” every single night, and having to answer it yourself. Ideally, a weeknight dinner should come together in less than a half-hour, be equal parts healthy and hearty, and require very minimal dishwashing after the fact. This garlic mushroom chicken thigh recipe from Cafe Delites checks off all three boxes, so I can confidently say that I do know what is for dinner tonight.

Have I mentioned how big of a fan I am of chicken thighs before? (Yes, I have.) But to reiterate, thighs are juicier, more flavorful, harder to overcook, and cheaper (!) than boneless chicken breasts, so when faced with the option, I usually prefer the former.

I can’t wait to sear my *favorite cut of chicken* in buttery, garlicky, mushroomy, herby sauce. First step: Sear the seasoned chicken thighs in oil in a large skillet. Place the browned thighs off to the side and in the same pan, melt butter and cook the mushrooms until soft. Season and add in garlic and herbs including parsley, thyme, and rosemary. Throw the chicken back in and garnish with the herb of your choice.

I plan to serve this over Trader Joe’s frozen brown rice (which cooks in three minutes). Operation Delicious Weeknight Chicken Dinner: Complete.
