Can we have an honest discussion about chicken? Why are we all so obsessed with it? Is it really that great? In the case of this garlic basil chicken that’s swimming in tomato butter sauce from Pinch of Yum, yes — yes it really is that great.
I’m so sorry, chicken, I should have never doubted you. I’ll never do it again, I promise.
The main reason why this chicken recipe is so great is because it only requires seven ingredients total: chicken, pasta, garlic, olive oil, tomatoes, basil, and butter. You’re going to want to start by boiling your water for the pasta because everything after that will happen very quickly (which is ideal).
Pound out your chicken to an even thickness and heat olive oil in a large skillet. Pan-fry the chicken until the outsides are golden and the insides are no longer pink and set aside. Add in the tomatoes and simmer until broken down into a chunky sauce. It’s time for garlic and butter! Simmer the sauce until it gets creamy and then return the chicken to the skillet for a nice, hot bath. Stir in basil just before you’re ready to serve and plate the saucy chicken over a bowl of pasta. The only thing you really have to anguish over is what shape of pasta that you want to use.
