Funfetti Flair with 2 Easy Additions

  1. Add sprinkles, of course! Sprinkles are a must-have for Funfetti sweets, and we like multi-colored long, waxy, cylindrical sprinkles for these Rice Krispies treats. Save a few to press into the top of the treats for a pretty presentation.
  2. Almond extract for birthday-cake flavor. Boxed birthday-cake mix has an aroma that cannot be achieved with vanilla extract alone. The secret? Add a splash of almond extract to the mix.

Funfetti Rice Krispies Treats

Ingredients

  • 6 tablespoons

    unsalted butter

  • 1 (10-ounce) bag

    mini marshmallows (about 4 cups)

  • 1/2 teaspoon

    vanilla extract

  • 1/4 teaspoon

    almond extract

  • 1/4 teaspoon

    kosher salt

  • 6 cups

    rice crisp cereal, such as Rice Krispies

  • 1 cup

    rainbow sprinkles

Instructions

  1. Line an 8×8-inch baking pan with a parchment paper sling, leaving several inches of overhang on 2 sides. Melt 6 tablespoons unsalted butter in a large saucepan over medium-low heat. Stir in 1 (10-ounce) package mini marshmallows, 1/2 teaspoon vanilla extract, 1/4 teaspoon almond extract, and 1/4 teaspoon kosher salt until melted. Turn off the heat.

  2. Gently fold in 6 cups rice crisp cereal (such as Rice Krispies) and 1 cup rainbow sprinkles until completely coated. Transfer mixture to prepared pan and press into an even layer. Cool 1 hour before cutting into 16 squares.

Storage: Leftovers can be stored in an airtight container at room temperature up to 5 days.
