You already know we’re big fans of elote here at Kitchn, so when I found these Mexican street corn dogs, I knew had to share them with you. A cross between a corn dog and Mexican street corn, this is truly summer on a stick.

When it comes to the corn dogs for this recipe, you can either make them from scratch or start with store-bought. If you go the homemade route, the author provides all the batter ingredients and instructions in his recipe.

What matters most here is how you top the dogs — specifically you need charred corn kernels, a mayo-sour cream drizzle, crumbled cotija cheese, and plenty of cilantro and cayenne pepper.
