French Onion Chicken Lasagna Roll-Ups Are a Balm for Stressful Days
Do you need a break, or about an hour and a half when you focus on the calming, meditative process of chopping vegetables, stirring pots, and rolling pasta around a filling? This French onion soup-inspired chicken lasagna is absolutely made for a stressful day (and we’ve had a lot of those lately). This recipe has a lot of ingredients, and it’s not a quickie meal you can throw in a skillet while juggling a baby in one hand, and trying to draft a work email with the other. But it’s rich and savory and the perfect thing to make when you have some time to spare and need a good task to focus on.
This recipe starts with caramelized onions, which are always savory, sweet, umami-packed flavor bombs that make everything taste more delicious. Making caramelized onions is absolutely worth the 30 to 40 minutes of slow, calm stirring they require. You can’t really take a shortcut with caramelized onions. But if you focus on the process of just standing over a pan and stirring for about half an hour, you’ll be rewarded with sweet, savory caramelized onions that smell and taste so good you’ll want to wrap yourself in a blanket and eat them with a spoon.
These roll-ups aren’t really a traditional lasagna by any means. Where a lasagna would have layers of noodles, this one has lasagna noodles rolled around a filling, which makes it easier to portion out and eat when it’s done. Each rolled lasagna noodle contains a layer of ricotta cheese and a generous helping of spinach and chicken cooked with garlic. Then all the rolls are sunk into a dish of thyme-enhanced bechamel sauce to turn them into a pasta casserole so rich it would make lasagna blush. And as if that weren’t savory and comforting enough, they’re topped with homemade caramelized onions and shredded gruyere cheese, which really makes this dish look and smell like French onion soup in pasta form.
