10 Things to Bake When You Don’t Have Flour

As grocery stores struggle to keep their shelves stocked, and as more and more people begin to take up baking as a way to destress, flour has become a hot commodity. If you’re not able to find flour, don’t worry! There are plenty of tasty desserts that don’t require flour at all. From classic flourless chocolate cake to lemon-almond cake, here are 10 of our favorite desserts made entirely without flour.

1. 5-Ingredient Flourless Chocolate Cloud Cake

The trick to making this cake light and soufflé-like is to whip the egg whites until they form soft peaks. This is what gives the cake its impossibly light texture and beautiful deflated center. Fair warning, you’ll want to bust out your hand mixer or stand mixer to do this. While you can whip those whites by hand, it’ll take some serious effort.

2. Apple Pie Granola Bars

One of the best ways to use up a bunch of random pantry items is to make homemade granola bars. This recipe calls for a fresh apple, but if you don’t have one, you can use dried apricots, craisins, or any other dried fruit you have on hand. In fact, as long as you keep the base recipe the same, you can change up the add-ins and toppings however you like.

3. Flourless Chocolate Cookies

These ultra dark cookies are made with just eight ingredients and take less than an hour to make. The recipe calls for a combination of dutch and black cocoa powders (a half cup of each), but if you don’t have them on hand you can use one cup of Hershey’s Dark Cocoa Powder instead.

4. Gluten-Free Banana Bread

This recipe swaps out regular all-purpose flour for 1 1/2 cups of oat flour. If you don’t have oat flour, you can make your own by pulsing an equal amount of old-fashioned rolled oats in a food processor until ground and flour-like.

5. Toasted Coconut & Almond Chocolate Clusters

Chocolate, coconut flakes, and almonds are all you need to make these simple chocolatey clusters. They are the perfect treat to keep in the fridge and snack on throughout the week, so go ahead and make a big batch.

6. Almond Cookies

If you have almond flour, baking powder, maple syrup, and vanilla extract, you can make these simple-but-delicious cookies. And, if you don’t have almond flour on hand, you can easily make your own by grinding whole almonds in a food processor until they are the texture of sand.

7. Flourless Chocolate Cake

Ok, we know we already have a flourless chocolate cake on the list. This one calls for a few more ingredients, including espresso powder, which elevates the chocolate and brings out its rich flavor. If you don’t have espresso powder on hand, you can simply omit it or replace it with the same amount of instant coffee.

8. Chocolate-Almond Toffee

If you’re looking for a fun project, toffee is just the thing. It’s made with five staple ingredients and makes plenty of leftovers to gift or snack on throughout the week. If you don’t have a candy thermometer, you can just eyeball the mixture: As soon as the melted sugar turns to the color of peanut butter, it’s done.

9. Muesli Snacking Cookies

If you don’t have pre-made muesli on hand (AKA a mixture of oats, dried fruits, and nuts) you can use 1 cup of rolled oats plus 1/2 cup of any dried fruit and 1/4 cup of any chopped nuts or seeds. The recipe is pretty flexible, so as long as you have 1 3/4 cups of a muesli total, you should be good.

10. Sticky Gluten-Free Lemon Cake

A simple glaze made with powdered sugar and lemon zest gives this cake a moist, slightly sticky texture. Serve it with a dollop of whipped cream, yogurt, or sweetened sour cream to take it to the next level or keep it simple for the perfect breakfast cake.
