How pretty is this rhubarb soda with raspberry and mint leaf ice cubes? What a perfect early summer treat!
The recipe for this rhubarb soda was created by Noema at the Berlin-based blog Intercultura y Cocina. We can only pick out a few words in Spanish, but the ingredient list is clear: rhubarb, sugar, water and soda water. Luckily, we have Dana's recipe for rhubarb syrup to follow, as well.
For the soda, use a 1:3 syrup to soda water ratio.
If our translation is correct, Noema confesses to having a love/hate relationship with rhubarb, which seems to be a universal phenomenon. For every person we know who loves rhubarb, there's another who can't stand it, and some who waver back and forth. But who could possibly turn down such a colorful and refreshing summer drink?
