Fig Goat Cheese & Blackberries on Toast: Plus More Little Bites on Toast
There’s a reason why so many appetizers involve spreadable cheese: It’s easy, tasty, and fast to spread some goat cheese or cream cheese on a cracker or mini toast, top it with something yummy, and call it an hors d’oeuvre. Take these little toasts, for instance: They have fig goat cheese and half a blackberry, and that’s it.
Together with a glass of Lambrusco or off-dry white wine, these are a really delicious way to start an evening. I made them in the last 5 minutes before my in-laws arrived for dinner a few weeks ago, and they were the perfect little bite.
These are just one example of how easy a little appetizer can be. Just make sure you have a packet of crackers or mini toasts and a log of goat cheese or a block of cream cheese, then improvise a topping. It’s also an easily delegated task; ask an early-arriving friend to spread cheese and top with fruit (or chopped almonds, or herbs, or a sprinkle of smoked salt).
And yes, while this sort of appetizer does involve cheese (many of you expressed your weariness with the preponderance of cheese in easy appetizer ideas) similar snacks could also be whipped up with a smear of hummus or baba ghanoush. You could create a bean dip and sprinkle shredded cabbage on top for a crunchy, healthy bite. (Look for more non-cheese appetizers soon on The Kitchn.)
