These Feta-Stuffed Lamb Meatballs Might Make You Buy an Air Fryer
I highly recommend trying these wildly flavorful lamb meatballs. They’re stuffed with feta cheese and have chopped olives mixed into the meat, for an ultimate punch of classic Mediterranean flavors. If you happen to have an air fryer, it’s also a perfect time to try using it.
The author says the air fryer is perfect for cooking meatballs, because it helps them keep their shape and cook evenly. They stay moist and juicy without requiring a lot of extra cooking oil. You do have to work in batches because they won’t all fit in the air fryer at once, but each batch should only takes about eight to 10 minutes to cook. If you don’t have an air fryer, you can still make them in an oven on a baking sheet lined with parchment paper, or even in a skillet on the stove.
The meatballs sound like they’d be great on their own, but you can dress them up with a lemon-yogurt dressing with fresh herbs. Drizzle it over the tops of the meatballs, or use it to dress a grain bowl or salad. You could also serve these with a side of orzo, or put them on some bread for a creamy, Mediterranean-inspired take on a meatball sandwich.
