February is a month of mixed emotions. On one hand, it feels a bit celebratory because we made it through January, but on the other hand, it’s the very middle of winter and spring still tends to look pretty far away. Luckily the kitchen can provide comfort during this chilly month to make it not only tolerable, but also delicious and fun. Here are 20 recipes we can’t wait to make this month.

Cozy Soups and Stews

For many of us, February is the coldest month of the year. That means lots and lots of soups and stews are in order to keep us warm from the inside out. It’s also nice to use something simmering on the stove all afternoon as an excuse to avoid the chilly temperature outside.

Casseroles That Warrant a Get-Together

With the avoidance of facing the cold often comes the potential for becoming a bit of a hermit in February. While we can’t blame you for this (we’re guilty of it too), one of the easiest ways to survive the month and get closer to spring is to schedule a few gatherings with friends. Make a big casserole, open some wine, and spend some time with your favorite people.

Something a Little Romantic

Whether or not you plan to celebrate Valentine’s Day, you can’t avoid the fact that February is a bit of a romantic month. So we say embrace it and cook a nice meal with your spouse, your best girlfriends, or just for yourself.

Lots of Chocolate

Speaking of Valentine’s Day, we like to think of February as a 28-day-long excuse to indulge in plenty of chocolatey treats. So definitely bake a decadent cake or dip juicy strawberries in the good stuff.
