For the month of September we asked our readers to cook along with us through Samin Nosrat’s Salt Fat Acid Heat. People shared what they made in our private Facebook (follow along!) and on Instagram using the #kitchncookbook hashtag. Now that we’re wrapping up the month and looking ahead to October, we asked everyone for their favorite recipes they made from the cookbook. 1. Tomato Confit
The most popular recipe from Salt Fat Acid Heat amongst our readers was the tomato confit. I think people were impressed with how easy it was, and also its versatility in the kitchen. You can use it on toast, for a charcuterie board, or in pasta.
2. Buttermilk-Marinated Roast Chicken
Our readers – like the rest of the internet – were also very into the buttermilk-marinated chicken. It’s so easy! All you need is chicken, buttermilk, and (good) kosher salt to make the best damn roast chicken of your life.
3. Persian-ish Rice
Samin’s take on tahdig was also very popular amongst our readers. I love how @viviancomelately topped hers with herbs.
4. Cacio e Pepe
Think of this recipe as the best mac and cheese you’ll ever make in your life! And it couldn’t be simpler. Just grab some Pecorino Romano and spaghetti and you have dinner.

5. Nekisia’s Olive Oil and Sea Salt Granola
Salt Fat Acid Heat doesn’t have a ton of traditional breakfast-friendly recipes, but this granola is the exception. It’s perfect for your morning bowl of yogurt!
6. Garlicky Green Beans
The garlicky green beans were another huge hit with our readers. They’re a great crunchy, green side dish that go with just about any main.
7. Slow-Roasted Citrus Salmon
