Everything is better with everything bagel spice, including flaky puff pastry cheese straws. This three-ingredient recipe answers the call for an appetizer that’s both easy and delicious. Put them out for your holiday party, game night, or casual hangout with friends, and it’s all but guaranteed they’ll disappear in a flash.

Everything Bagel Spice in Every Single Bite

To work every last seed and dried bit of onion, garlic, and salt into the dough, you’ll want to use your rolling pin. Sprinkle half the seasoning over the thawed and unfolded puff pastry dough, flip the dough, coat with more seasoning and some Parmesan, then roll, fold, and roll again. This ensures every bite is packed with flavor, and that the seasoning won’t just roll right off the twists.

Since you’re working the dough so much (and therefore warming it up), pop the straws in the fridge to chill after slicing and twisting them before sending them to the oven.

  1. Thaw 1 (17-ounce) box frozen puff pastry (2 sheets) puff pastry in the refrigerator according to package directions. Refrigerate until ready to use.

  2. Arrange a rack in the middle of the oven and heat the oven to 400ºF. Line 2 baking sheets with parchment paper. Finely grate 2 ounces Parmesan cheese (1/2 cup).

  3. Unroll or unfold the puff pastry sheets onto a work surface. Sprinkle with 2 tablespoons of the everything bagel spice. Flip the sheets over and sprinkle with the Parmesan cheese and the remaining 2 tablespoons everything bagel spice. Roll each sheet into a 10x12-inch rectangle. Fold each sheet in half widthwise to form a 10x6-inch rectangle. Roll each one out again to a 10x8-inch rectangle.

  4. Cut each rectangle lengthwise into 8 (1-inch wide) strips. Transfer the strips to the baking sheets, spacing them an inch or so apart. As you set them down, twist the ends in opposite directions to give the straws a spiraled look.

  5. Refrigerate at least 10 minutes or up to 1 hour. Bake until puffed, crispy, and deep golden brown, 20 to 23 minutes.
