When you think "breakfast for dinner," what comes to mind? Maybe pancakes? A frittata to use up scraps of veggies in your fridge? How about an everything bagel with cream cheese — in pasta form?
Yeah, you read that right! This everything bagel pasta is a totally new twist on breakfast for dinner. It's unique and surprising, yet familiar and comforting all at the same time. Serve it the next time you've got a hankering for bagels at 7 p.m. and need to get dinner on the table in record time.
All you have to do is cook your pasta (the authors use linguine) until al dente, reserving some of the hot pasta water before draining. Then you put the pasta back in the pot; drop in the cream cheese, everything bagel seasoning (a mix of sesame seeds, poppy seeds, onion flakes, garlic flakes, and salt), and some of the reserved pasta water; and stir until a creamy sauce forms. And that's all there is to it — told you it was fast and easy!
The authors suggest serving the pasta with a garnish of sliced scallions (to taste like scallion cream cheese on your bagel!) and something green on the side, like a simple salad or roasted broccoli. I also think this would taste divine with some smoked salmon tossed in to really seal the deal on the bagel theme.
