Everyone Will Love This One-Pan Chili-Lime Chicken and Rice

This 30-minute one-pan meal comes together with minimal ingredients but packs big flavor. It’s wholesome and filling and everyone in your family is sure to love it. If that doesn’t check all your weeknight dinner boxes, I don’t know what will!

The secret to getting flavorful results in such little time is all in the spice blend. You combine chili powder, paprika, garlic powder, onion powder, cayenne, salt, and pepper and sprinkle it on the chicken before you sear it in the hot skillet.

Once the chicken is browned on each side, you remove it from the pan and add in some rice, more of the spice blend, chicken broth, and lime juice. After stirring to combine, you place the browned chicken on top of the rice mixture, cover the pan, and let it all cook together for 20 minutes or so.

While the chicken and rice are on the stovetop, you can quickly toss together a simple green salad to serve on the side. Then all you have to do is bring the pan to the table, fluff the rice with a fork, and garnish with more fresh lime juice and some cilantro. If you have any leftovers, they’ll be perfect for lunch the next day. Win-win!
