If you’re stuck in a breakfast rut, sometimes all you need to do is take a basic dish and turn it on its head. These granola tarts, for example, are a riff on the simple granola-yogurt-fruit breakfast combination. Instead of sprinkling granola on top of the yogurt, we’re turning the granola into mini tart shells. Breakfast just got way more exciting.

To make the tart shells, you essentially bake a batch of granola — with rolled oats, sesame seeds, chopped walnuts, honey, cinnamon, vanilla, and melted coconut oil — in mini tart pans.

Once the shells are cool and crispy, just fill them with your favorite yogurt (Greek vanilla is a great choice) and some fresh fruit. Right now in-season berries or stone fruit would be delicious.
