Easy Weeknight Dinner: Baked Mediterranean Chicken Packets
If the one-pan cooking craze has taught us anything, it’s that there’s something so satisfying about making your meal in one vessel. And these Mediterranean chicken packets — layered with red peppers, olives, artichokes, and sun-dried tomatoes and wrapped in foil — are no exception.
To make this easy weeknight dinner a reality, you just have to place four 12-inch squares of aluminum foil on a baking sheet, place a chicken breast in the center of each square, layer each chicken breast with the toppings, and fold the foil over to create little packets.
After about 20 minutes or less in the oven, you’ll have moist, tender chicken ready to be served over rice or with a side salad.
