Next Week’s Meal Plan: 5 Easy Summer Dinners Everyone Will Eat
Summer will always taste like cold watermelon, meaty tomatoes, and sticky-sweet barbecue chicken. June flew by and July is right on its tail, and that means we need to eat up these flavors before it is fall again!
This week’s meal plan is all about making the most of summer flavors, but in some easy, weeknight-friendly ways before it’s time for our back-to-school routine. Here’s what my family is cooking and eating this week to soak up the essential flavors of summer.

Monday: Orzo Tabbouleh
Tomatoes, check. Cucumber, check. Quick-cooking orzo? Check. This summer pasta salad has all the fresh flavors I’m craving and will be perfect as dinner on the porch with some big slices of watermelon. Depending on everyone’s appetite, I may drain a can of chickpeas and add them to the mix too.
Tuesday: Ground Beef Taco Casserole
This is the casserole to make when you’re craving barbacoa but don’t have the time (or, honestly, the crowd to feed) to make it. One thing to love about this casserole is that you can eat it as a salad (for adults) or as a dip with chips (for kids). Buy extra avocado for Thursday’s burgers and extra cheese for Friday’s pizza.
Wednesday: Succotash Salad
Possibly my favorite meal of summer is this succotash paired with grilled bread and cold wine. It’s best eaten on a picnic blanket in the sunset, but honestly this is going to taste just as celebratory of summer in my AC-cooled dining room.
Thursday: Turkey Avocado Burgers
We’ve eaten plenty of burgers already this summer, but these turkey burgers actually feel extra special, thanks to the avocado topping. Bonus: The burger patties can be made on Sunday. I’m not fussing with any other sides — I’m just gonna buy a bag of crinkle potato chips.
Friday: BBQ Chicken Pizza
What is summer without some sticky-sweet BBQ sauce? I have leftover barbecue chicken in the freezer, but you can easily grab a roasted chicken from the grocery store (and even pizza dough) and make this summer-inspired pizza the perfect end to a flavor-filled week.
