Monday: 15-Minute Shrimp Scampi

This version of shrimp scampi is delicious and takes just 15 minutes to prepare. Any dinner that requires less than 20 minutes to make is already a win in our book. Because the shrimp is the star of the show here, you can choose whichever kind of pasta you love — try linguine or spaghetti, or switch things up and go with some pappardelle or penne.

Tuesday: Garlic Butter Pan-Seared Salmon

Salmon is a total crowd-pleaser, and it also takes almost no time to make. And less time spent in the kitchen with the oven and stove on means more time to enjoy the sunlight and fresh air waiting for you outside. Make this flavorful salmon dinner in a matter of minutes and serve it with your favorite side dish — perhaps a tasty rice pilaf or just some seasoned sautéed broccoli.

Thursday: Mahi-Mahi Tacos with Avocado Sauce

Mahi-mahi might be one of the most underrated forms of seafood out there. Sure, shrimp, crab, and lobster are beloved around the dinner table, but try mixing things up and make these simple fish tacos with some quality mahi-mahi. Just like with most taco recipes, these are best when served with fresh toppings like pico de gallo as well as the delicious avocado sauce.
