This Epic Mustard-y Potato Salad Is Loaded with Bacon

Who says potato salad is just for summer? Sure, it shines at picnics and an outdoor barbecue isn’t a barbecue without it, but this classic warm-weather side is great in any season. And this particular potato salad from Joyful Healthy Eats, which swaps mayonnaise for a tangy mustard dressing and is loaded with bacon, makes a strong case for eating potato salad whenever you want it.

I grew up in the days of gloopy, heavy potato salad swimming in mayonnaise, and there’s certainly a time and place for that sort of thing. But this dressing is mostly mustard and Greek yogurt, which is a fresh and flavorful alternative. The sauce lightly coats the potatoes and fixings so it’s not too runny or gloopy. It’s not exactly what a lot of people picture when they hear the words “potato salad,” but a big batch will always welcome at any big parties, meals, or get-togethers (and the winter season is full of those).

It’s also super-simple to make: Toss cooked (and cooled) potatoes in the dressing, add some diced or sliced hard-boiled eggs, lots of freshly-chopped herbs, and plenty of crunchy bacon. Everything should be lightly and evenly coated in the grainy mustard dressing.

It’s ready to eat immediately, and would be excellent as a side dish or as the main event with some fresh greens on the side.
