A Week of Easy High-Protein, Veggie-Packed Dinners
I currently have a vegetable craving that just won’t quit, so that is the driving force behind meal planning for me right now. Bring on all the green things! When it comes to mealtime, vegetables alone won’t satisfy my family, though, so my goal for the week is a mix of high-protein dinners (both meaty and plant-based), that also pack in plenty of vegetables. Everyone wins.
From a chicken and Brussels sprouts skillet to a honey-garlic stir-fry, here’s what I’m eating this week.
Monday: Moroccan-Spiced Chickpea Bowls
Between chickpeas, a poached egg, and Greek yogurt, these meat-free bowls are filling and oh-so satisfying. I plan to get a head-start on dinner by making the bulgur, chickpeas, sautéed kale, and sauce in advance, so all that’s left to do is reheat the components, make the poached eggs, and assemble the bowls.

Tuesday: Hot Honey Garlic Skillet Chicken
What first drew me to this dinner was the Brussels sprouts. Roasting is usually my go-to, so I’m excited for this skillet dinner where they’re coated with rich chicken drippings and hot honey. Best of all, dinner comes together with one skillet, five ingredients, and 30 minutes on the clock.

The middle of the week calls for something cheesy and comforting. Instead of chickpeas, I plan to use a can of white beans that’s been lingering in the pantry, along with some leftover kale from Monday’s dinner.

Thursday: Warm Fajita Steak Salad
Instead of wrapped fajitas (I forgot to buy tortillas), I plan to turn some cumin-rubbed steak and charred pepper and onions into a warm salad. I plan to make the vinaigrette and slice up the vegetables during my weekend meal prep session, so that dinner comes together in about 10 minutes from start to finish.

Friday: Honey-Garlic Chicken Stir-Fry
Stir-fry is one of my favorite dinners at the end of the week because it helps me use up whatever lingering veggies are in the crisper. Plus it’s quick and easy, and this honey-garlic sauce is so good.
