You Need This Cheesy Taco Soup in Your Life

For years I’ve been telling my toddler that the magic words are “please” and “thank you,” but apparently I was wrong. Clearly the magic words are “taco soup.” I had never had taco soup before, but as soon as I heard the phrase, I knew I needed it in my life immediately.

The premise of this taco-inspired soup is completely sensible: ground beef, beans, black olives, and cheese are delicious together. Every plate of nachos is evidence of that. So the next step is just to combine all the components of a great plate of nachos together into a pot with some beef stock and let them all melt together until you have what is essentially nacho soup. I don’t know how anybody resists eating it with tortilla chips instead of a spoon.

This recipe takes advantage of a big packet of taco seasoning as a shortcut to make a taco-flavored soup that comes together in less than 20 minutes from start to finish. It starts with browned ground beef, and browning the meat in a pan is easily the most labor-intensive part of the entire recipe. Once you have that, you just add canned tomatoes, corn, kidney and black beans, sliced olives, beef broth, a lot of shredded cheese, and the taco seasoning. The pot is brought to a boil and allowed to simmer for around three minutes, and then it’s ready. It’s hard to believe a soup could go together so quickly, but with just 10 minutes of prep time and 10 minutes of cooking time, this recipe is a lightning fast way to get dinner on the table.

You could serve it as-is, but this recipe is begging to be topped with sour cream, cilantro, sliced avocado, or tortilla strips. It’s warm, hearty, and comes together lightning-fast, and it’s perfect for feeding a big, hungry crowd.
