On the lookout for easy breakfast ideas? Me too! While I will always carve out time on the weekend for a strawberry-laced Dutch baby, a tower of French toast, or an omelet, during the week I’m all about keeping it as simple as possible. I’m a strong believer that weekday mornings demand a breakfast that’s satisfying and easy as can be.

And easy can mean several different things. Sometimes an easy breakfast is one that comes together with just a few basic ingredients (looking at you, three-ingredient pancakes!). Other times, it means a morning meal I can whip up in practically no time at all, with barely an effort, or leaning on a little prep work ahead of time so come morning, the heavy lifting is already done.

From creamy overnight oats to smoothies to stuffed sweet potatoes, these are the 10 easy breakfast ideas that I keep in my regular recipe rotation.

1. Blueberry Walnut Overnight Oats

You’ll spend less than five minutes stirring everything together, and come morning breakfast is waiting for you. The recipe makes enough to serve one, but it’s super easy to scale up to feed more or so you have leftovers for the days ahead.

2. Mediterranean Breakfast Pitas

If hard-boiled eggs are a staple in your house, slice them up and slide them into a pita with some chopped vegetables and a spoonful of hummus.

I’ve made Australian folded eggs dozens of times now, and they never look as good as this — but it doesn’t matter because their tender creaminess totally makes up for it. Serve the eggs on their own, on a piece of avocado toast, or with some greens.
