Before making this recipe, I had a strong feeling that I wasn’t going to enjoy it. I wasn’t crazy about the ingredients, and the combination didn’t seem particularly inspired. Not to mention, salt and pepper were the only seasonings! But after removing the aluminum foil from the cooked dish, the scent of sweet onions filled my kitchen, and I began to rethink my assumption.
Turns out, I did like it! The combination of savory beef, creamy potatoes, sweet onions, earthy peppers, and acidic tomatoes struck an impressive balance of flavors that kept me coming back for bite after bite. I added some of my favorite hot sauce to my serving and polished it off within minutes. Could it use a couple spoonfuls of herbs and spices? Sure. But for the time it took to prep and assemble, it delivered a perfectly tasty, warming, and satisfying meal that could easily feed six hungry people. Dolly, I’m sorry I ever doubted you!
3 Tips for Making Dolly Parton’s 5-Layer Dinner
- Season each layer well. Since we’re not relying on herbs and spices to amp up the flavor of this casserole, it is imperative that each layer of this dish is well-seasoned with salt and pepper. I decided to toss each vegetable with the seasonings in a large bowl to really distribute the salt before transferring it to the baking dish. (The only ingredient I didn’t salt was the canned tomatoes, because mine came with salt added.) If your casserole is tasting bland, it could be under salted, so feel free to finish it off with a big pinch before serving.
- Let your ground beef get golden and crispy. Getting some char on your beef will add a much needed layer of flavor to the final dish. - Cut your potatoes at least 1/4-inch thick (not thinner). My biggest issue with this casserole was the potatoes, which turned out extremely soft, to the point of being mushy. I cut my slices about 1/8-inch thick, so I think next time, I’d cut them at least twice as thick for a better texture in the final dish.
