There are nights when chopping veggies, simmering a sauce, and kneading dough are exactly the therapeutic tasks you need. Then there are nights when any task that puts off eating dinner is one task too many. On those nights, we’re likely to reach for quick comfort foods that provide instant gratification but leave us feeling ultimately unsatisfied.

Let’s talk about those nights.

Instead of doing takeout on the couch, take some help from the freezer aisle and make yourself something that’s ridiculously easy but still in the world of food you feel good about. A jazzed-up frozen pizza is the exact compromise of “low-effort comfort food” and “still pretty good for you” you’re looking for. Daiya’s dairy-free Cheeze Lover’s Pizza is our canvas, and the addition of a few high-impact garnishes transform it into a very satisfying Cheezy Bacon-y Brussels Sprouts Pizza.

Start by preheating the oven and cooking the pizza according to the instructions. Take a minute to watch the gluten-free crust crisp up and the dairy-free mozzarella- and cheddar-style shreds melt all over it, because it will warm your soul. While it finishes, quickly sauté a handful of shredded Brussels sprouts in a cast iron skillet, and toss in some vegan bacon bits right before you take the pan off the heat. Once the pizza’s done, toss the blistered greens mix on top. Finally, a drizzle of balsamic glaze validates your quick creation as a full-on grown-up meal.

The pizza is best enjoyed on a couch with the TV on, but that’s just a serving suggestion. Either way, a few strategic food choices means you’ve avoided a total food coma, and you can go to bed a little bit happier.
