Make This Cucumber Salad for Easy Summer Lunches

I can’t get enough of cucumbers right now. I could eat them with every meal — tossed in a quick salad or served by themselves with some salt and vinegar. It’s just the right cooling veggie you want to serve at a party when it’s hot outside. Or, you know, when you’re inside blasting the AC by yourself and you want a healthy snack. That’s why, when I came across this simple cucumber salad from Live Simply, I knew it had to make it in the near future.

I love this cucumber salad because it seems hearty enough to eat for a make-ahead summer lunch. “The entire salad only requires four main ingredients, and just a few basic salad dressing ingredients,” Live Simply explains. Besides cucumbers, the recipe includes lots of red onion, chickpeas, feta, and cilantro. I also love that the vinaigrette used for the salad includes lime juice — something I’ve honestly never thought of using on cucumbers.
I can also see serving this salad alongside any main dish you’d pull off the grill this summer — burgers, steak, cauliflower steak, etc. The salad only takes 10 minutes to make, and is an easy dish to pass off to someone else while you focus on the grill.
