This Zippy Cucumber Salad Is the Perfect Summer Snack
It’s well over 90 degrees where I live, and all I’ve been wanting to snack on for the past week is cucumber salad. It’s light and refreshing and, most importantly, it does not involve turning on a heat source in your kitchen. There are a lot of cucumber salad recipes out there, and most — like this cucumber and onion salad from The Cookie Rookie — are very easy to make. If you have some cucumbers, apple cider vinegar, and red onions, the perfect side dish, snack, or light summer lunch is less than 10 minutes away.

While the recipe doesn’t take very long to make, it does benefit from some time in the refrigerator to let the flavors blend. Just combine sliced cucumbers and red onions in a bowl and you’re more than halfway there. To make the dressing, mix apple cider vinegar with some salt, sugar, black pepper, and a bit of water in a Mason jar, then shake it up. Pour the dressing over the cucumbers and onions, and you’re finished. If you like, add some fresh dill or parsley.
One of the best things about cucumber salad is that you can make a big batch at the beginning of the week and keep it in the refrigerator, and the flavor just gets better over time as the cucumbers and onions marinate in the dressing. I plan on pairing this with some cooked chicken breast and feta for a nice summer lunch in the coming months.
