Crustless Quiche Lorraine Is Keto Comfort Food
Quiche is classic comfort food: It’s filled with eggs, heavy cream, and often cheese. Sometimes bacon tags along. And it can actually be a perfect low-carb or keto meal — all you have to do is leave off the crust.
A crustless quiche originally struck me as scandalous. I love a crust! It’s the best part of any quiche, or any sweet or savory pie for that matter. But after a few bites of crustless quiche, I realized I didn’t actually miss the crust at all. Without a crust, the quiche is like a frittata, but with the creaminess of a quiche. The texture is lighter and fluffier, too.
To get that ideal density, make sure to take the quiche out of the oven when the egg and cream mixture is just set, but not too firm. Let it cool before slicing it and the texture should be perfect.
This recipe from blogger Hey Keto Mama has all the onion and bacon flavors of a classic quiche Lorraine. It also includes Monterey Jack and Swiss cheese, which give the quiche a wonderful flavor. And while quiche Lorraine does not always include cheese, I’ve never been sorry to see a bit of cheese in a quiche.
One of the great things about quiche is the way it works at basically any time of day. It’s a perfect and easily transportable lunch, or an elegant brunch option. This crustless version is a particularly great keto-friendly breakfast, because it’s a flavorful and protein-filled way to start the day that will keep you energized until lunchtime.
