Chickpeas are one of my absolute favorite things to eat. You can eat them dried, cooked, plain, with salt — you get the idea! The fact that they can be used in so many dishes is exactly the reason why it was so fun and easy to find dishes that put chickpeas on a pedestal.

Chickpea salads, like the Chickpea Quinoa Salad from The Healthy Foodie is a quintessential crisp and healthy salad that showcases chickpeas in all their glory.
