When you’re looking for comfort food, lasagna is one of the best you can make. This version switches up the classic beef and red sauce lasagna for a rich, savory, chicken and cream sauce lasagna that’s every bit as rich and cheesy as the original. You won’t believe how satisfying a chicken lasagna can be, especially with fresh tomatoes, basil, and loads of melted mozzarella. 

This white lasagna is inspired by the flavors of a caprese salad. The tomatoes and mozzarella make it taste salty and summery. You could use any kind of tomato here: cherry tomatoes work, as do full-sized tomatoes. This recipe calls for sun-dried tomatoes, which makes it extra savory, and sun-dried tomatoes are easier to keep around than fresh tomatoes.

The cream sauce is made with a base of cream cheese. That might be unconventional, but it will give you a white sauce that’s as comforting as a big, fluffy blanket. It also makes the sauce much quicker and easier to make. 

One of the best things about lasagna is how well it keeps, and how good the leftovers are. Lasagna usually tastes even better the second day, and if you freeze it in individual portions, you’ll be able to go back for seconds whenever you like.
