This Tortellini and Sausage Soup Is Perfect for Pasta-Lovers
Soup has a reputation for being a nice appetizer, or something to eat if you’re not feeling well, but this thick and creamy soup recipe from Pinch of Yum absolutely thinks it’s an entrée — and we do, too. This soup is so rich and so loaded with sausage that it’s hard to tell if it is really a soup at all. It might just actually be a pasta dish with two or three extra helpings of sauce. If your favorite part of eating pasta is dunking bread in the extra sauce at the end, this is the soup for you.
I grew up on tortellini soup, but it was nothing like this. My grandmother’s tortellini floated in a thin broth with maybe a few spinach leaves and a light sprinkle of Parmesan. It was lovely for sick days, but days when you have a big appetite and still need some comfort food call for a soup that contains a whole lot more substance.
The cool thing about this recipe is that when you start making the soup base, it’s basically like starting a pasta sauce. Thinning it with six or seven cups of broth and a couple cups of heavy cream turns it into a rich, creamy soup, and it also makes it a meal big enough for a crowd. If you want to have a great party, dish out six to eight bowls of this soup and a pile of warm, crusty cheesy bread, pass out some napkins, and get ready to share a convivial night of dunking and slurping.
