Creamy. Mustard. Chicken. I don’t know if there are another three words in the English language that could possibly bring so much joy to our readers. So when I saw this recipe in Jamie Oliver’s 5-Ingredients: Quick & Easy Food, I immediately knew it was going to be a winner.

Oliver makes this recipe a little more special with the addition of mushrooms (another reader favorite!) and red onions. And the whole meal comes together in a single pan. Dinner, my friends, is served.

Creamy Mustard Chicken

Serves 2

  • 7 ounces

    mixed mushrooms

  • 1

    red onion

  • 2

    (4-ounce) boneless, skinless chicken breasts

  • 2 teaspoons

    whole-grain mustard

  • 1/4 cup

    heavy cream


  1. Place a 12-inch non-stick frying pan on a medium-high heat. Place all the mushrooms in the dry pan, tearing up any larger ones. Let them toast and get dark golden and nutty, tossing occasionally, while you peel and finely slice the red onion and slice the chicken breasts into 1/2-inch-thick strips.

  2. When the mushrooms look good, add the onion and chicken to the pan with 1 tablespoon of olive oil. Cook for 5 minutes, tossing often, then add the mustard, cream, and 2/3 cup of water. Bring to a boil, then simmer until you’ve just got a loose saucy consistency and the chicken is cooked through. Taste, season to perfection with sea salt and black pepper, and dish up.
