Creamy Garlic Parmesan Chicken Is a Dinner Winner

Last week I found chicken breasts on sale at the grocery store — and it was a big sale, too! — and I squealed with glee as though the Beatles were coming to town, or my favorite canceled TV show just announced it was getting another season.
I am constantly amused by the things that delight me as an adult. (My city just rolled out new recycling bins, and they are fantastic.) My adolescent self would have rolled her eyes at the idea of being excited about a sale on chicken breasts, but my grown-up brain was like, This is a score! With chicken breasts, I can do anything.
Chicken breasts are the unsung heroes of the weeknight dinner. They will absolutely save your butt when you pour into the house an hour later than expected and you have 20 minutes to get dinner on the table before everyone starts filling up on crackers. If you have chicken breasts in the house, you’re two-thirds of the way to a great dinner already. And if you also have some cream, garlic, and Parmesan, this one-skillet recipe for creamy garlic Parmesan chicken will take you the rest of the way to comfort food with a single pan.
All this recipe takes is to cook some chicken breasts with salt, pepper, and olive oil until they’re nicely browned and cooked through. Then take those from the pan and set them aside, and fill the pan with garlic, some cream, and a bit of Italian seasoning and let it simmer until you have a really nice sauce. The author suggests adding chopped spinach to the sauce, and I agree that sounds like an excellent thing to do with a cream sauce like this. Then just sink the chicken back into the sauce and let it simmer for a minute, and you have a rich, creamy, garlicky main dish that could be served over pasta, or on its own with a side of vegetables.
