These Creamy Mushroom Chicken Thighs Are a One-Pan Wonder

The first day back after a long weekend can be rough, so don’t make things harder on yourself by attempting a complicated, fussy recipe tonight. Enter: this garlic mushroom chicken from Cafe Delites. It’s creamy and comforting, and it comes together in 25 minutes — just what you need on a Tuesday that feels like a Monday!

To start you’ll need to coat some boneless, skinless chicken thighs with a mixture of onion powder, garlic powder, dried herbs (thyme and rosemary), and salt and pepper. Then you’ll heat some oil in a skillet and pan-fry the chicken thighs until they’re golden on each side. (If you’re not working with a large skillet, you’ll probably have to do this step in batches in order to avoid overcrowding the pan.)

Once you set the chicken aside, you can make the sauce right in the same pan, which means all those flavorful brown bits don’t go to waste. All you have to do is sauté some mushrooms in butter; add minced garlic, fresh parsley, and dried herbs (thyme and rosemary again); and stir in the heavy cream and Parmesan cheese.

When you’re ready to serve this meal, add the chicken back into the pan to let it mingle with the sauce and then plate it up with the side of your choosing. (Some roasted asparagus or brown rice would be perfect accompaniments!)
