Make Creamy Garlic Butter Tuscan Shrimp for Dinner
Kitchn’s Delicious Links column highlights recipes we’re excited about from the bloggers we love. Follow along every weekday as we post our favorites.
If a recipe doesn’t begin with melted butter and six cloves of finely diced garlic, is it even worth making? I know I’m being dramatic, but a pretty big percentage of our favorite recipes here at Kitchn start with the magical combination of butter and garlic. We’ve got garlic butter salmon, garlic butter steak and potatoes, garlic butter rice, buttery garlic knots, and garlic butter mashed potatoes. Are you noticing a pattern here?
Since all the best things start with garlic butter, consider making these creamy garlic butter Tuscan shrimp from Cafe Delites for dinner tonight. (If garlic butter isn’t enough of a selling point, note that this dinner will be on the table within 15 minutes or less.) Let’s do this.
But first, let’s think a little ahead and decide if you want to eat this creamy shrimp over pasta, rice, veggies, or toasty bread. If it’s one of the first two, boil a pot of water and get your starch going so as to not derail the speediness of the recipe.
To make the shrimp, heat butter and garlic in a large skillet and add in shrimp, cooking until it turns pink. Set the cooked shrimp aside and use the flavorful pan drippings to cook a diced onion. Pour in white wine and reduce, scraping the buttery bits off the pan and into the sauce. Add in sun-dried tomatoes, reduce heat, and add in half-and-half, simmering while it thickens. Now it’s time to throw fresh spinach and Parmesan cheese to the mix. Once the sauce is your desired consistency, add the shrimp back in and serve!
