Cocktails in Popsicle form will always be one of my favorite parts of summer. I mean, when else is it acceptable to gorge on icy-cool treats spiked with booze? This version features all the elements of a mojito, with creamy coconut milk added in for good measure.
These refreshing ice pops are made with a base of full-fat coconut milk that's been infused with maple syrup, fresh mint leaves, lime zest and juice, and a vanilla bean. And while this would be delicious on its own, the addition of rum takes it into true mojito territory.
