Cranberry Brie Bites

In the hierarchy of crowd-pleasing appetizers, gooey baked Brie wrapped in flaky puff pastry has a standing spot at the top of this list. It just doesn’t get more reliable or delicious. In my opinion, the best version is a miniature one — so go ahead and pull out your mini muffin tin. This bite-sized appetizer promises buttery puff pastry, creamy cheese, sweet-tart cranberry sauce, and toasted walnuts in every bite.
Cut, Press, and Layer
After thawing and unfolding the puff pastry dough, you’ll cut it into nine equal-sized pieces. I like to use a pizza slicer for cutting puff pastry, although a sharp knife works too. You’ll then press the dough into the wells of a greased mini muffin tin, then fill each one with a cube of Brie, a dollop of cranberry sauce, and a few pieces of chopped walnuts. Off to the oven they go until the pastry is golden and the cheese is melted and gooey.

Ingredients
- 1 (17-ounce) box
frozen puff pastry (2 sheets)
Cooking spray
- 6 ounces
Brie cheese
- 1/2 cup
cranberry sauce or chutney
- 1/4 cup
chopped walnuts (optional)
Instructions
Thaw 1 (17-ounce) box frozen puff pastry (2 sheets) in the refrigerator according to package directions. Refrigerate until ready to use.
Arrange a rack in the middle of the oven and heat the oven to 400ºF. Lightly coat a mini muffin tin with cooking spray.
Cut 6 ounces Brie cheese into 1-inch cubes. Refrigerate while you prepare the puff pastry.
Unfold both sheets puff pastry. Cut each puff pastry sheet into 9 squares (18 squares total). Press each square into a mini muffin tin well. Add 1 Brie cheese cube to each well. Top each with 1 teaspoon cranberry sauce and 1/2 teaspoon chopped walnuts.
Bake until puffed and lightly browned around the edges, 18 to 20 minutes. Cool for 5 minutes before serving.
