Cowboy Caviar Is Taking Over This Summer, and It’s the Crunchy, Flavorful Dip You Need to Make

Searching for the perfect addition to your summer grillout, or need to switch up your afternoon snack game on a sweltering day? Look no further than Cowboy Caviar, a hearty, chunky salad-that’s-also-a-salsa. You may remember this crunchy, flavorful dip from potlucks growing up, but thanks to some pretty creative TikTokers, you can find so many fun ways to spin this summer essential. 

You could say Cowboy Caviar — aka Texas Caviar — is a take on pico de gallo, but with way more ingredients. Bria Lemirande, a TikToker who helped make the dip popular again this summer, typically adds black and pinto beans from a can, chopped bell peppers, tomato, avocado, jalapeño, red onion, corn, black olives, and feta. But the beauty of this dip is that you can truly add whatever you want to a bowl and call it done.

While traditional Cowboy Caviar usually contains Italian dressing as a base, you can create a different take like Nutrition By Kylie and add olive oil and apple cider vinegar instead. Don’t forget fresh, chopped cilantro, lime juice, and both salt and pepper to top it off! 

Of course, it’ll taste great no matter what you add — and fair warning, you’ll probably want to eat it with a spoon — but there’s also a practical element that makes this dip appealing. “It’s no surprise Cowboy Caviar is taking over TikTok this season,” says Kitchn’s recipe developer Patty Catalano. “It’s one of the few dips that lasts for hours at room temperature.”
