You won’t spend hours making a cake only to then crumble it up, shellack it with caramel, and toss it in a pint of ice cream. No, most of these recipes involve just a few clever mix-ins that pair flavors for surprising creations. I’m a particular fan of their liquor-inspired ice creams — “Blueberry Mojito Ice Cream”? Hello!

Their standard ice cream base uses whole milk, cream, sugar, and eggs — no secret add-ins or finicky prep requirements. The Coolhaus ladies also include recipes for vegan ice creams, a heartier gelato base, and sorbets, plus a handful of cookie recipes for making your own ice cream sandwiches. It’s a mix-and-match kind of situation with the sandwiches, though Natasha and Freya include suggestions for their favorite combos.

A fun bonus feature: there are quick bios of famous architects sprinkled throughout the book. Natasha and Freya are both architecture buffs (Natasha was studying to be an architect before founding Coolhaus), and have let their love of “form meets function” inspire their ice cream sandwich creations.
