Popsicles are already refreshing, but infuse them with fresh mint and you've got an extra-cooling treat to pull out of the freezer on sweltering summer days. These pops are based on mint-chocolate chip ice cream, but you won't find any artificial colors here! That classic green color is all thanks to a little matcha powder.
To get that mint flavor infused throughout the entire Popsicle, you first need to warm some coconut milk, salt, and sugar in a saucepan over medium-low heat. When the mixture is steaming, you take it off the heat and add in your fresh mint leaves. After letting the mint leaves steep in the coconut milk for about 30 minutes, you can strain them out, leaving you with a perfect minty-fresh base.
While the author does say adding the matcha powder is optional, I think it's totally worth it to get that green color that we all know and love in mint-chocolate chip ice cream. It's not as bright as the artificial stuff, but that's to be expected!
As for the chocolate chips, you drop those into the molds after pouring in the base (but before freezing). Once the pops come out of the freezer you drizzle them with melted dark chocolate and sprinkle on some cacao nibs for a little crunch and textural contrast.
These would be perfect served at a backyard barbecue or pool party, or just as dessert at home during the next heatwave!
