If you’re like me, then you love cookies in just about any form — whether studded with chocolate chips, rolled in sugar, or chock-full of butter. When making cookies at home, you’ll likely find yourself in one of two situations: either you’re making cookie dough from scratch or you’re getting ready to put prepared, sliced, store-bought cookie dough on your baking sheet. Whatever the case may be, you need to try this ingenious hack for getting perfect, delectable cookies.

Baker and TikTok user CookingwithKarli posted a video demonstrating a technique to help get crisp, voluminous cookies. Instead of simply placing a smooth ball of cookie dough on your baking sheet, use your hands to split the ball in half, and then gently squeeze it together. This technique helps achieve nice, crispy ridges on the top of the cookies.

Comments on the post from CookingwithKarlie mention that the technique has shown up in various other places, including Cook’s Illustrated and Binging with Babish, who uses the technique to create cookies reminiscent of those from New York City–based bakery chain Levain.
