If it were up to my husband, we’d eat pizza for dinner every single night. Yes, even though we have a standing Pizza Friday each week, it’s just not enough for him. So I’m never surprised when he suggests these flatbreads for dinner, seeing as they’re essentially pizza with a fancy name. I usually let it slide since they’re such a quick, satisfying meal and I will also happily eat them on repeat.

If you’re anything like me, you’ve walked past the rows of salad kits at Trader Joe’s in amazement. Who knew there could be so much variety in one simple grocery store convenience? It seems like every time I stop and ogle at them, there’s a new kind squished in between the bags of baby spinach and Cruciferous Crunch. While they make a nice and easy side dish on their own, these salad kits typically lack the protein needed to turn them from side dish into main dish.

I’m always looking to make quick and easy weeknight meals, but especially on Mondays, when it’s still sinking in that the weekend is over. Tempting as it is to order takeout and sulk, I’ve found it’s much more rewarding to cook something at home and kickstart a week of eating healthy homemade meals.
